Acceptable Cheese Steak Cheeses

Pat's standard is Cheese Whiz, slathered on the bun. There was no such a thing as Cheese Whiz until the 1950s, so Remus goes back to Pat's 1930s version and uses provolone.
American cheese, white, is an acceptable alternative but only with a convincing story involving duress or deprivation. Some folks admit to using cheddar, also acceptable if just barely. Like roller skating on the guardrails of a high bridge, it can be done but there seems no compelling reason for it. Predictably, cheddar fans claim connoisseurdom. Yeah. What we don't need with no steenking connoisseurdom. The one cheese that is never acceptable is Swiss. John Kerry learned this the hard way when he visited Pat's. It made the headlines. The only question was whether this gross disrespect was accidental or intentional. Don't misunderstand, Swiss is a noble creation anywhere other than on a steak sandwich. Cheese Whiz isn't bad on a philly but provalone is the best, I think. And I like green peppers on it, too.

And yet, Cheez Whiz is a pasteurized, processed (cheddar)cheese-like food product. (Sort of like Velveeta, which I suspect would also be anathema!)

Provolone is mandatory.
So are the onions, peppers and 'shrooms, and a slathering of mayonnaise.
Add in a stout side of curly fries and a great big vat of foamy root beer.
Is that all american or what?
It don't git no better'n that.....

Two Cousins, in Lancaster Country. Best cheese steaks. Better than Philly. Wit provolone, onions, mushrooms. But hold the sauce for me.
I have had cheese steaks in Philly...not as good as Two Cousins in Lancaster. I guess because it was my first ever cheese steak, and no one has come close. It is the home made cheese steak roll the use. 18 inches of hot, crusty love.
