As it dies its lingering post-harvest death, however, lettuce, like all produce, continues to respire, desperately consuming its own carbohydrate reserves as its cell membranes break down and its water content evaporates. -- Edible Geography

I felt so bad after reading this that I went to the grocery store and bought many heads of lettuce, some bunches too, and set them free in the wilderness.

"Freedom from the capitalist war-monger racist ruling class of imperialist elites that have their feet firmly on the necks of decent citizens of the world." That's my motto.

Oh, and lettuce too. Free lettuce.
