Does a bear fart in a jar?

Murphy has at times cooked and jarred black bear. She says bear meat can cause flatulence but otherwise is delicious.

This is a good time to remember that the Indians prized a bear above all other animals, because a bear had so much fat. Of course, if you were close enough to kill the bear, the bear was close enough to kill you, so he who killed the bear was honored above all men.

In a land teeming with every kind of animal to eat, and the best weaponry available, the men of the Lewis and Clark expedition faced near starvation because all the meat was lean, and carbohydrates were scarce. They too, sought to kill a bear at every opportunity---for the fat.

Bear meat is greasy, very greasy, to the point of being inedible to most palates. It does make terrific sausage, though, in my opinion.

I remember eating black bear jerky when I was a kid. It was delicious. Jerky was a staple in our homes in the winter in northern Montana.

Some thought that bear was human in a fur suit and would not eat him. I tend to agree.

Zebra meat makes me gassy too. Good for space in crowded elevators though.

Much of the flavor depends on what the bear has been eating. A bear that has been mainly feeding on plant material (99% of black bears that are not eating garbage) will taste fine. But it is a dense, greasy meat, think lamb shoulder. Smoked, jerked, or sausage are the way to go.

A bear that has been eating meat will not taste so good. But a bear that has been eating carrion is in a whole separate league, if you don't gag while field dressing it then you have no sense of taste/smell.

My favorite Vietnamese restaurant is Cat-ona-Stick. Much better than dog which is preferred by the heathen Chinee.


I suspect the primary problem with eating bear is not being eaten by the bear yourself.

Counter-intuitively, the highest level of bear consumption per capita in the United States is not found in the wilds of Alaska, but the actual epicenter of the culinary cultural practice is endemic to several sections of the city of San Francisco.

Just another common urban myth...As with the practice of "teabagging" by "Teabaggers"; which is often depicted in the 'popular [urban] culture' as a conservative fly-over regional phenomena but is in fact primarily an urban liberal activity.
