I am paying $1.89/lb for ground beef and $3.00/lb for bacon. At $4.00/lb, this must be a delicacy. Like escargot.

Another name for chittlins? (Sows' wombs were a Roman delicacy and I have some authentic recipes, but I'll probably never try them myself -- they look disgusting --, and will certainly never cook them up for the students in my high school Latin classes. I assume I would be fired immediately.)

And if I'm ambitious enough, maybe I could look for a full pig for a nice lechon asado - roasted pig, Puerto Rican style. Add some rice with pigeon peas, cola champagne soda and coconut rice for dessert, and you will have the perfect Puerto Rican meal!
